How to convert units of measurement between metric and US customary

Nearly every conversion problem is the same problem: one system was built on tens and the other on halves and twelfths, so the numbers between them are never round.

The metric system converts by moving a decimal point

Metric units scale in powers of ten, which is why metric-to-metric conversions need no calculator at all: a kilometre is 1,000 metres, a metre is 100 centimetres, a centimetre is 10 millimetres. Mass works identically — kilogram, gram, milligram — and so does volume. Once you know the prefix you know the factor, and the arithmetic is a shift rather than a multiplication.

US customary units convert by remembering arbitrary factors

Twelve inches to a foot, three feet to a yard, 1,760 yards to a mile. Sixteen ounces to a pound, but sixteen fluid ounces to a pint and eight pints to a gallon — and a US gallon is not an imperial gallon. There is no pattern to derive, which is exactly why a conversion chart is a more useful thing to have in front of you than a rule to memorise.

Weight and mass are the one that trips people

A conversion between kilograms and pounds is really a mass conversion, and it holds anywhere. Converting a weight to a volume — a scale reading to a measuring jug, the "feet to lbs" style query — does not work without knowing what the substance is, because it depends on density. Water is the convenient case at one kilogram per litre. Flour, oil and soil are not, and a recipe that swaps one for the other by volume will be wrong by a wide margin.

Temperature has an offset as well as a scale

Every other conversion is a single multiplication. Temperature is not: Celsius and Fahrenheit disagree about where zero is as well as how big a degree is, so the conversion is multiply then add, and reversing it means subtract then divide. That extra step is why doing it in your head so often lands a few degrees out, and why −40 is the one temperature where both scales agree.
